Japanese Fusion Miso Fish
This recipe was created by chef Bill Granger and comes from his book ‘Feed Me Now!’. It’s a very tasty and healthy dish overall, except for its high sodium/salt content due to the amount of miso paste the original recipe uses. I have reduced this so that the sodium is within the healthy range without losing the Japanese Fusion spin.
Serves 2 | Cooking time ~25 mins
Ingredients
2 x 200g pieces firm white fish fillet (I used barramundi fillet)
2 teaspoons miso paste
1 teaspoon sugar
1 teaspoon lemon juice
1 teaspoon extra virgin olive oil
Finely sliced shallot
Pinch of sesame seeds
Method
Place the fish on a lightly oiled baking tray. Preheat the oven to 200’C
Stir the miso paste, sugar, lemon juice and olive oil together in a bowl to combine
Brush the fish with the miso mixture on one side
Put the fish fillet in the oven for 10-11 minutes or until the fish is about cooked through
Add sliced shallot and roughly sprinkle sesame seeds
Put the fish back in the oven for one more minute
